I know, there are websites I can use to help me come up with dinner ideas but I always like OT's ideas better. So, I come to you for help.I have a pound of ground turkey. I need to make dinner. I have no ideas. I usually make chili with ground turkey but I don't really want to do that today. Help me, OT! I don't really want to go to the grocery store if I can help it. So for pantry staples, I have various shapes of pasta and a couple of different kinds of rice (Jasmine and good old Uncle Ben's.) I also have steamable brown rice in the freezer. In the bread department, I have half a loaf of wheat bread and a couple of bagels. Veggies, I have some tiny zucchinis that I'd like to use before they go gooey, as well as carrots, roma tomatoes, onions and russet potatoes. I have some frozen peas and some frozen mixed veggies (carrots, corn, peas, green beans.) I have canned tomatoes, too. I have a fairly well stocked spice cabinet. Give me your ideas, please!

Turn a piece of bread into bread crumbs (or a couple) Make Turkey meatballs, add some spices, dried onion soup mix if you have it and the bread crumbs, may need and egg.Bake the meatballs. Make a sauce with the roma tomatoes, onions and zucchini. Add the zucchini near then end as they won't need to cook that long and toss in the meatballs (drained) once they are cooked. Serve over pasta.

Probably not so family friendly, though. I use ground chicken or pork to make this, but turkey would work, too. A Thai visiting scholar taught me this, and this was the closest online recipe I could find: http://www.1worldrecipes.com/recipe.asp?r=746Pad Kra Pow • 2 tablespoons vegetable oil • 6 garlic cloves, finely minced • 5 fresh green serrano or jalapeño chiles, seeds and stems removed, finely chopped (that's kind of a lot) • 2 pounds ground pork • 3 tablespoons fish sauce • 2 tablespoons dark soy sauce • 1/4 cup sugar • 1/2 cup chopped thai basil (I've used regular italian sweet and it's fine) Heat the oil in a large wok or skillet, add the garlic and saute it carefully, taking care not to burn it. Add the chiles and stir fry over a medium heat for 30 seconds; then, add the pork and continue cooking, breaking up the meat, until all the pink is gone. Stir in the remaining ingredients until the mixture is well blended and hot, about 1 minute. Serve over rice. -A Tribetastic Creation

If you have bell peppers, then you've got the makings for Spanish Rice.Brown turkey, remove from skillet. Add chopped up bell peppers and onions. Saute until soft. Add meat back to skillet. Add crushed tomatoes and tomato sauce. Stir. Add chili powder (I use alot! - but just add and taste) Add about a cup of rice (whatever you have on hand, minute rice works too). Add some water, stir. Cook on low. May have to continue adding water until rice is cooked. You can top with cheese, but doesn't need it.

This is from Sica in the Cookbook Organization thread:This is a big favorite (and I really hated meatloaf growing up). Thanks Rachel Ray! What you need: 1 1/2 - 1 3/4 lb. ground sirloin 1 med. onion, chopped 1 green bell pepper, chopped 2 ribs celery, chopped 1 large egg + splash of milk, beaten 1 c. bread crumbs 2 T. grill seasoning 1 c. BBQ sauce 1/2 c. salsa 1 T. Worchestershire sauce Extra Virgin Olive Oil What to do: 1. Preheat oven to 450 deg. F and grease muffin tin with oil. 2. In a large bowl, mix beef, vegetables, egg mixture and grill seasoning. 3. In separate bowl mix BBQ sauce, salsa and Worchestershire sauce. 4. Add half of BBQ mixture to meat and gently mix to blend. Scoop this mixture into the muffin tin (it should make enough to fill 12 spots but it depends on how much meat you get). 5. Brush remaining sauce mixture over meat muffins and bake for 20 - 25 minutes. DH and I have evolved the recipe to meet our tastes (more onion, no celery, no grill seasoning) and it is always delicious. However, even if you like your meatloaf recipe, just putting it into the muffin tins instead of loaf-style cuts down on cook time, makes for easy serving sizes, and every serving has a nice crust (my favorite part). It's definitely worth a try even if meatloaf isn't a favorite (DH decided it was too good to be called "meatloaf" so he dubbed them "Meat Marvels"). For easy clean-up, I have started using that new release foil by cutting into squares and pressing into the cups (the BBQ sauce can get kind of messy and I hate scrubbing dishes ). This is my spin on it:
1 lb. 99% fat free ground turkey ½ yellow pepper, diced ½ small Vidalia onion, diced About 5 mushrooms, diced ½ cup oats (I used Quaker quick oats) 2 egg whites About ½ cup ketchup
*You can play with the veggies. Last time I added the remainder of a bag of salad spinach to it. And I've also added chopped red bell pepper. Mix all together, toss in some salt, pepper. I would have added some Lipton onion soup mix had I had some. Shape into 12 balls (use ice cream scooper) and plop into a muffin pan (greased with Pam). Bake for 40 minutes on 375. I didn’t add any additional ketchup on top as I would do with regular meatloaf because I was trying to keep it neat. I popped them out of the muffin pan and into separate baggies for four lunches. Also, this might freak you out, might not. Sometimes I eat these cold, and they taste great. Especially if it's before going to the gym.

I fixed these for Ra, the boys, and the grandkids, and never told them they were "eating healthy" until the pot was empty. LOL Home Made Pizza sauce: 2 cloves garlic - minced 1 tsp salt 2 6 oz cns. tomato paste 2 8 oz cns. tomato sauce 1 tsp sugar 1/4 tsp fresh ground pepper 1 tsp oregano 2 TBS olive oil dash (or 2) red pepper Combine all ingredients. Makes approx. 3 cups sauce. This sauce is also good on homemade pizzas or calzones. Pizza Burgers ETA: Since you don't have peppers, why not use the zucchini? 1 lb ground beef, pork, or turkey 1 medium onion, chopped (1/2 c) 1 green pepper, chopped (1/2 c) 14 oz pizza sauce 1/2 cup sliced olives 1/4 cup shredded pizza cheese (or shred your own, it's cheaper.) Cook meat, onion, green pepper in skillet over medium heat for 8-10 minutes, stirring occasionally till meat is cooked through. Drain. Stir in sauce and olives, heat to boiling, simmer. I put the cheese into the mixture, but you could put it on top of the mixture after you put it on the bun. In this case, forget the buns and use the bread you have. Take your zucchini, carrots, roma tomatoes, onions and russet potatoes as the side dish. Heat 2 tsp oil in a skillet over medium high heat. Cook chopped onion till soft, add 2 1/2 cups of thinly sliced potatoes, reduce heat to medium -low. Cover and cook for 10 minutes, stirring until they are tender. Stir in zucchini and carrots (chopped) and use Mrs. Dash, or Italian seasoning to taste. Cover and cook, stirring occasionally until the potatoes turn a nice golden brown. Stir in 2 thinly sliced tomatoes and cook stirring gently just until hot.

Chop up all your veg into bite size-chunks and sautee them in oil in a big pan or wok. In a separate pan, do the same with your ground turkey.When the turkey is done but still moist transfer it over to join the big pan of veg. Toss them together. Season with cumin, tumeric, garlic powder, ginger, coriander and red chili powder. Toss till everything is evenly coated with spice... Stir in some yogurt or cream or even just milk until the the tumeric thickens the liquid into a nice golden sauce. Serve with steamed rice or couscous or a tiny pasta like orzo.

1 lb. ground turkey 1 egg 1 cup oatmeal 1/2 cup grated zucchini 1/4 cup ketchup 1 tsp. Salt 1/2 tsp. pepper 1 tsp. dried basil 1 tsp. dried oreganoPreheat oven to 350. Prepare loaf pan with Pam. Combine all ingredients and stir with fork. Press into pan and bake for 45 minutes. Top with additional ketchup and return to oven for 15 more minutes. Let cool for about 10 minutes before serving. My kids love this and it makes a great meatloaf sandwich the next day (assuming there's any left). Love each other as if your life depended on it. a bit of a mess, really. But it tasted good.As it turned out I needed something quick to prepare so that I could start cooking once Mr. Fro got home because my children teamed up to make it impossible for me to put anything together in advance. So I leaned toward the quick-cook stir fry ideas, although I didn't really have a full set of ingredients for either Weltek's or Ice Cat's. So, I stir fried the turkey with some seasonings (white pepper, salt, five-spice, ginger, corriander, garlic) and I crushed a few dried piquin peppers in the mortar and threw those in. Added soy sauce and some rice wine vinegar. Then I threw in the carrots (shredded) and the zucchini (cubed) and let those cook. I served the whole mess over yolk-less egg noodles. It tasted good. The noodles were wrong, though. Too heavy and the flavor wasn't quite right. I wish I'd had rice noodles on hand but I didn't. I considered rice (the brown rice, specifically) but I don't care for the texture of ground meat sauce over rice. (ground meat and rice mixed up - as in a stuffed pepper - is fine but not one served over the other.) Mr. Fro liked it, and Little Fro enjoyed the noodles and carrots so in all it was a success. No leftovers! I do have the other ideas here filed for future reference. I want to do Snidget's turkey meatballs when I have a bit more time to make a good sauce for them (and fresh herbs.) Sunny Bunny, your recipe sounds WAY better than throwing a can of Manwich over the ground turkey (which I have done) but I didn't do it this time because I really couldn't imagine eating it on wheat bread instead of buns. Mr. Fro LOVES sloppy joes so this one will certainly get used sooner or later. Tummy, if I'd only had green peppers I'd have made the Spanish Rice. Ice Cat's curry was high on the list but I had no yogurt (other than strawberry) or cream on hand. I do have 2% milk but I didn't think that would be sufficiently thick to make a good sauce. Weltek, I'm going to buy fish sauce and try yours the right way as opposed to my work-around method. Shar and Boo, I've not made turkey meatloaf before but your ideas are good. I just didn't have time to bake anything yesterday but as I mentioned, there is more ground turkey waiting in the freezer for me. Thanks OT!

Bun’s Egg Rolls1 pkg of egg roll wrappers 1 lb. pork, finely ground 1 4 1/2 oz can small shrimp (or buy fresh, about 1/2 lb) 1 cup cabbage (or, use pre-pkg. cole slaw) finely chopped 1 large carrot, finely chopped 1 clove garlic 2 tbs. soy sauce 2 tbs. corn starch 1 tbs. sherry or water (for an added zip, add a dollop of molasses, but don’t over do it!) 1 tbsp. peanut oil Peanut Oil for deep frying is healthier, but veg oil works too Cook pork ahead of time, and chop in processor. While the pork cooks, chop up the cabbage and carrot finely in the processor. Drain the shrimp, but don’t chop. In a measuring cup, combine: soy sauce, water or sherry, cornstarch and molasses. In wok, stir fry the garlic and pork in oil, till the meat is hot. Add vegetables, stir fry 2-3 min more. Add drained shrimp, and cornstarch mixture, stirring until coated (the sauce should thicken a bit, and cling to the meat and veges) Remove from heat, and let cool slightly. Wrap egg rolls: Put the wrapper in a diamond shape in front of you, use a soup spoon to measure filling (or however you like it, depending on your own preference) place filling in center of diamond, and wrap like an envelope. (bottom point, the sides and rolling the wrapper over the filling to the top.) Dip your fingers in water, and seal the edges of the wrapper. Fill wok about 1- 1/2 on bottom with peanut (or regular) oil, heat, and place egg rolls 2 at a time in the oil. Cook on both sides, until the wrapper turns a golden color, remove from oil and drain. (either on a drainer on your wok, or a wire rack with a paper towel under it works too) This will fill all 24 egg roll wrappers.

Usually they are the little salad shrimp in the cans around here. Usually with the canned tuna. I've sometimes seen them in the pouches as well.

The original recipe called for canned shrimp which is with the tuna, oysters etc. at the grocery store. You can use fresh shrimp, but you will need to put it into the processor or cut it into tiny pieces so that you don't have huge chunks of shrimp in with the smooth paste of the veges and meat.
