Jay, only one that used pear, the puree was pear. Jay the only one that used flank steak but it should be obvious the protein was (everyone else used venison)

I found Jay's notation about seeing family as hurtful for some to be interesting. A few of the chefs were at least momentarily defocused -- but overnight was probably enough to recover.

This whole 'someone might beat me because they did a better job' thing completely escapes him. And gnawed off its own leg to get away. Even if Holli wins, he's the better chef. Even if Gordon did the judging, Ben's was the better dish. And even if you're praying to your deity, Ben hears you and denies the request.

I seem to have more sympathy for his situation than the other contestants do -- but the fact remains that he bent down in the bathroom as a casual action with no reaction. I'm wondering if this is psychosomatic: here's an excuse why I can't win despite being superior, so let's roll with it!

He temporarily died from consuming a bad knockoff on surf & turf, but Benjamin was gracious enough to bring him back.
A newspaper article about the series asked Gordon the same question, having caught him in the middle of a challenge which saw a giant tray of bacon go onto the floor -- with his only regret being that the bacon had been perfectly cooked. It broke down to 'He doesn't yell at them because they're not used to it.' Professional chefs and line cooks know all about the screaming. Take away the kid factor and home cooks don't.
