You're a numbers geek, so let's look at what the odds have to be for break even on the bet 'em 3's. Payout for no bet 'em is 1:0 win:loss. Payout for bet 'em 3 is +3:-3 win:loss. If a team has a 60% chance of winning, then the payout is +0.6:0 with no bet 'em and +1.8/-1.2 with the bet 'em 3 for a net payout of +0.6 either way you bet. Therefore, if you think a team has better than a 60% chance of winning, you should place a bet 'em 3. You can also check the Vegas spread to determine whether the bookies figure that a team has a better than 60% chance of winning, but I'll leave the research to you as to what spread equals what percentage. (Yes, there is a minimum spread when you would bet 'em 3.) And I won't go into the trivial math of why you should never bet 'em 1 or 2 instead of 3. (eta) Just to add, the same math applies whether to go for an Upset Special when the consensus is all for one team. Assuming a team has a 75% chance of winning, the payout is +0.75:0 with a safe bet and +0.75(being 3 times 0.25):0 with the upset bet. Like above, there's a spread associated with 75% chance of winning. If it's at that spread or lower, go for the upset.
