**contains spoilers, don't look if you don't want to know. The contestants are back, and looking very refreshed. Mike's his usual ornery self, Bryan talks about what a relief it was to see his son, Jennifer's excited to have the gang back together. The most interesting to me is Kevin, who acknowledges that Mikey has been doing some smack talking, and admits he wants to show him up to prove his style. They meet on a train station platform and correctly surmise that they will be taking a train. Padma (looking radiant I must say) steps off a train with Top Chef Master and Napa guru Michael Chiarello. Quickfire Challenge, pick a grape and make a dish for padma and Michael, have to cook it on the train. Oh, and no pressure, but the winner of the quickfire gets a Prius. The contestants scramble to pick their prep spots and grapes. Kevin's getting nauseous from the motion, Jen wants that car so bad she can taste it, bryan wants to finally win a quickfire, but it's Mikey who pulls it out by using just about every part of the grape. Elimination challenge, prepare 2 dishes, 1 protein 1 vegetarian 150 portions each made Locovore style from a local farmers market. Kevin and Bryan are excited, as this is what they do in their own restaurants. No seafood for Jen, but she settles on Duck. Mikey likes the fresh eggs. It's obvious Jen is having trouble focusing, but she's pulling some great ideas with they beautiful produce. Kevin is taking a huge risk by braising grass fed beef brisket in only 4 hours. Bryan is is usual solid self. Judges table, very nitpicky. Jen had too much salt, otherwise great. Mikey's egg was underdone (ewwww) and vegetables were cut too fine. Bryans first dish was a tad undersalted, but overall great. Kevins beef was stringy (duh) but vegetable dish was fantastic. Tonight, the judges decide that too much salt was a greater sin than an undercooked egg, and Jen get the PPYKAG. Bryan wins and looks very relieved. And just for completeness, this means the finale will be Bryan, Mikey and Kevin. Everyone seemed sad to see Jen go, and I think this is a testament to how strong this season really was. I can't believe how talented these final four were. Can I ask a question of the more cooking savvy posters? If Kevin had tried to use a pressure cooker to get the beef less stringy, would it have ruined the flavor? It's totally a hypothetical, because I don't think he had access to one, but I'm just wondering what he possibly could have done in that time frame to make grass fed beef less stringy (or toothsome whichever you prefer!)

But on many other cheftestant type shows, a lot of the chefs utilize it, so there must be a very good reason. I would think time constraint would be a BIG one. As far as losing flavor, I don't see how it really would. You're basically cooking with all your spices, etc, just quicker, with a little more steam? Am I right about that? I'm sure someone more adept than I can answer this. I prefer to cook a lot of my proteins in a crock pot. Which is the opposite, takes way more time. But because it DOES allow the meat to simmer in the juices longer and grab more of the flavors. Plus, it's such an easy, leave-alone-and-go option! Especially for beef or pork, if you are going to BBQ and pull it. It's nice and juicy and not stringy at all. Sorry I couldn't answer that better. Anyway, I think Jen was the obvious choice to leave tonight. Overall, she has been the weakest link of the 4. And I'm so glad they figured all that into tonight's finale, part 1. And I do agree-after some of the childish pranks, and silly escapades we've seen on other episodes, this episode has been very up and up, with the exception of a few incidents with Robin, which were small in comparison to Marcel's almost hair-shaving! These people ARE professional, know their stuff and I, too, would be very pleased to eat in any of their restaurants. I just would never go to Micheal's, because I think he's a big cry-baby!
ETA: I am talking about the final 4, not the group as a whole, when I say I would love to eat their food.

Nice coverage mtb.Kevin has consistently cooked simply but with detail and perfection. & Michael has constantly talked about Kevin's cooking as being less than his. Then when Colechio (sp?) mentioned that, I laughed. I had wondered how much of the film tapes the judges were seeing before judging; now it's pretty evident they're watching. Yes, Jen was the one to go; tho I wish it had been Michael. I really didn't want to see both brothers in the finale. I hope Kevin wins.
