The mango salad recipe and an upcoming picnic have me thinking again about potluck recipes. I know we've had these in the past. Any new good ideas to share?

I am making a Smores Cake recipe (from one of those Pillbury magazine stand cookbooks) for the first time this week. It's for a family cookout where there will be five kids, so it seemed like a good plan. I'll share how it turned out this weekend.

Smores Cake

1 cup Pillsbury's Best All Purpose or Unbleached Flour
2 cups graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup firmly packed brown sugar
1/2 cup shortening
3 eggs
1 cup milk
1 cup miniature semi-sweet chocolate chips
7-oz. jar (1 1/2 cups) marshmallow creme

Instructions

Heat oven to 350 F. Grease and flour 13x9-inch pan.

Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, graham cracker crumbs, baking powder, soda and salt; set aside. In large bowl, beat brown sugar, shortening and eggs until well blended. Add dry ingredients and milk; mix at low speed until well combined. Beat at medium speed 1 minute. Stir in 2/3 cup of the chocolate chips.

Spread batter evenly in prepared pan. Bake at 350 F. for 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.

Meanwhile, in small saucepan over low heat melt remaining 1/3 cup chocolate chips. Spoon teaspoonfuls of marshmallow creme onto top of warm cake; carefully spread with knife dipped in hot water. Swirl melted chocoalte through marshmallow creme to marble. Cool completely.

1 can whole kernel corn drained
1 can black beans drained
½ cup finely chopped red onions
1 large seeded ripe tomato, chopped
2 tbs red wine vinegar
2 cloves chopped garlic
Fresh cilantro if available
Juice from 1 fresh lemon
Juice from 2 fresh limes
1 tsp cumin
A couple shakes of garlic salt, with pepper to taste

This can be served as a side dish or with a big of Tostitos Scoops!

YUMMY POTATO CASSEROLE


6 potatoes, boiled and chilled
1 can cream of chicken soup
1 (16 oz.) sour cream
1/4 c. butter, melted
1 1/2 c. shredded Cheddar cheese
1/3 c. green onions, chopped
2 c. crushed corn flakes

Shred potatoes. Combine butter, soup and sour cream. Add onions. Combine with potatoes. Pour into a 13x9 greased pan. Top cheese and corn flakes. Bake at 350 degrees for 45 minutes.

I make one very similar, only I use a bag of shredded hashbrowns, no butter or cornflakes and a Vadalia onion instead of the green.

I almost made this instead of the cake for Friday, but the hostess is making steak and baked potatoes.

Believe it or not, I've never made the hashbrown casserole before. Is Moely's recipe pretty much exactly what you use (other than what you mentioned)?

Yes, I think I have to bake it for an hour because the hasbrowns are frozen.

I use these instead of frozen.

I also use dried chives when I don't have any fresh onions on hand. They work fine.

I also omit the butter, but I do like the crushed corn flakes on top.

eta-I also mix the cheese in with the potato mixture instead of putting on top.

325 for about an hour.

I put the cheese in the potatoes as well.

"Watermelon Salad"

I was going to save this for OTCC but summer is pretty much over by the time I would have posted it and it's too good not to share.

I know some of you will cringe because of the feta and Boo will snarl because of the mint.

INGREDIENTS

1 small red onion
2–4 limes, depending on juiciness
small, sweet, ripe watermelon - sugar babies are good to use or my favorite, black diamond
feta cheese
bunch fresh flat-leaf parsley
bunch fresh mint, chopped
3–4 tablespoons extra virgin olive oil
1 can pitted black olives
black pepper

Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with the lime juice, to bring out the transparent pinkness in the onions and diminish their rasp.

Remove the rind and seeds from the watermelon, and cut into approximately 1" triangular chunks, you can just melon ball it if you want quick. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Tear off sprigs of parsley so that it is used like a salad leaf, rather than a garnish, and add to the bowl along with the chopped mint.

Tip the now glowingly puce onions, along with their pink juices over the salad in the bowl, add the oil and olives, then using your hands toss the salad very gently so that the feta and melon don’t lose their shape. Add a good grinding of black pepper and taste to see whether the dressing needs more lime.

This is Nigella's recipe - I've tried others and this is by far the best. I add just a touch of sugar to the lime juice.

I've made this before minus the olives and mint, and it IS very good. A great way to surprise people at a cookout.

Fruit Salsa and Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

Divine! I use marmalade for the preserves. Read the comments for all the different variations. Very addictive, and a big hit at potlucks.

Serve with pita chips or bread rather than tortilla chips, but otherwise like the layered mexican bean dip.

Hummus (instead of refried beans)
Baby Spinach leaves (rather than lettuce) shredded.
Chopped cucumber
Chopped onion
Black Olives
Greek Yogurt (instead of sour cream)
Feta Cheese

It is a nice twist on a 7 layer dip.

It is very, very good!

I was thinking "doesn't this have roasted red peppers" so had to go back and look at recipe threads. Found (I was lucky, I'd booked marked the Superbowl appetizer thread )where you'd said you didn't like roasted red peppers and subbed cucumbers for them. And I use kalamata olives.

Last summer I did both the cucumbers and the roasted red peppers thanks to you doing the whole subliminal thing. And it made it better.

This was a huge hit around here last summer. Every time I served it, people wanted the recipe. I tinkered with it a lot. Some additional ingredients: pine nuts on top, fresh basil, fresh bell peppers, spanish or other olives. The roasted peppers are great in this.

I think as long as you include hummus, spinach, some type of olives and the feta, you cfan do what you like with the rest.

I've seen versions with chopped tomatoes as well, it certainly is something you can play around with. I think anything you could put on a greek salad would work well on this.

The original recipe said to chill and it had marinated artichoke hearts also. I love those, so in my house it was an 8 layer dip but I added cucumbers after Snidge said she had subbed cukes in. So I added cukes and now it's a 9 layer dip. And all the better for it.

I make a pan of oven baked nachos for football games in the winter. Probably not a great plan for a potluck, though. You could do a nacho bar (chips, nacho cheese, sour cream, salsa, pickled jalepeno slices, black olives, green onions...).

My oven baked nachos:
-Thin layer of tortilla chips on a foil lined cookie sheet
-shredded cheddar cheese
-Very finely diced green pepper and onion
-Taco meat or shredded chicken, if so desired
-chopped jalepeno (pickled or fresh)
-Sprinkle with chili powder
-Bake at 350 until cheese is well melted
-Serve with salsa and sour cream on the side

I make something similar, except I put the Taco seasoning in the sour cream and not the beans.

No recipe but a confession.

I'm a nacho snob.

I'll only eat those made from actual tortilla chips, not those disgusting wannabe things that are in truth just fritos with a glandular disorder. They just get soggy, limp and useless.

I'm also particular (though not as persnickety) over the other toppings -- nice chunky guacamole is a must, the jalapeños can't be too big, and there must be plenty of clean chips for scooping.

Whereas I have issues with the pile of nachos where the toppings are not at all evenly distributed. I prefer no clean chips.

This was another favorite from last summer around here.

Untraditional Salad Nicoise
Adapted from Sunset; Serves 8 to 10

3/4 pound green beans, cut into 2-in. lengths
4-5 red potatoes, scrubbed
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1/2 medium red onion, slivered, rinsed, and drained
1-2 lemons or 2 tablespoons bottled lemon juice
1 cup mayonnaise
1 tablespoon Dijon mustard
1 medium garlic clove
About 1/4 tsp. kosher salt
Freshly ground black pepper
2 tablespoons drained capers
1 cup pitted Niçoise olives
optional: 1 cup seeded, chopped cucumbers

1. Cook green beans in a large pot of boiling water just until tender-crisp, 7 to 8 minutes. Drain, cool in a bowl of ice water, drain again, and chill until ready to use.
2. Put potatoes in a large pot, cover with cold water, and bring to a boil over high heat. Reduce heat and simmer just until tender when pierced, about 15 minutes. Drain. When they're cool enough to handle, quarter potatoes and put them in a large bowl. Pour vinegar and olive oil over warm potatoes; add the onion, mix gently, and let stand until cool.
3. Meanwhile, make aioli: Finely shred peel of 1 lemon and squeeze enough lemons to get 2 tbsp. juice. Stir together mayonnaise, lemon juice, mustard, garlic, salt, and lots of pepper until smooth. Add lemon zest and blend.
4. Mix cool potatoes with aioli and the capers. Cover; chill until cold.
5. Just before serving, gently stir in green beans, olives, cucumbers, and more mayonnaise if salad is too dry, and salt and pepper to taste.

Nutritional Information per serving: Calories: 350 (67% from fat) Protein: 4.5g Fat: 26g (sat 3.6) Carbohydrate: 27g Fiber: 4g Sodium: 419mg Cholesterol:12mg

I love that thread. It was fun to talk about food with the Prof.

I having a birthday party for the kids this weekend and am still noodling over what to make. I tend to go bonkers on appetizers and create way too much work for myself so I'm trying to be smart. I have to bake/decorate two cakes so the food-food has to be fairly low-maintenance.

I am making Weltek's jerk ribs, and Seana's cool slaw, for certain. Still deciding what else to have.

My easy peasy suggestions:

Lots of fruit.

And just buy a big tub of potato salad if you need something low maintenance.

If you must have an appetizer, cheese and crackers or veggie pizza.

The older I get, the more I'm about one or two "food stars" and the rest must be easy.

Where were you when I needed you to talk me down this weekend?

We had about 14 people over for a BBQ on Monday and I spent Saturday and Sunday preparing the following:

Spicy, lemon marinated olives
warm german potato salad
tabouli
cole slaw
three different salads on a stick with homemade dips/drizzle (ceasar, greek and caprese (sp?))
jerk ribs
portuguese chicken - the only thing we bought from a restaurant)
grilled pineapple (to go with the pumpkin roll my neighbour brought, and a dollop of french vanilla ice cream)

Oh, and one brother brought his homemade guacamole.

I'm still exhausted.


I realized on Friday how international this menu turned out to be

Tell me about portuguese chicken. I have a recipe for portuguese chicken that is a huge family favorite. I almost did it for OTCC. I wonder if it's the same thing.

Chickens slow roasted on a spit with a few spices, paprika and the like. Then you serve a sauce on the side or you can brush the chickens with it. The sauce is a mixture of Franks Hot Sauce and olive oil. I think the traditional hot sauce to use is piri piri but I like Frank's better.

If you don't have time or the inclination to measure and mince, you can always put some pasta, like rotini, with a few cups of diced vegetables (if you have to, thaw that frozen bag of mixed veggies) and mix it with enough Italian dressing to coat. I like to add sliced ripe olives and have some parmesan ready to grate on top.

This could also work with Ceasar or Ranch dressings.
