When I make this again, I will probably only marinade it for 30-60 minutes. This time I marinaded for about 3 1/2 hours because that is what the recipe said, even though I had always thought that chicken shouldn't be marinaded that long or it could become tough. And it did come out a bit tough, which I forgot to mention above. When I marinade chicken for other recipes, < 60 minutes seems to add flavor but maintain tenderness. Food for thought.
