LAST EDITED ON 08-11-16 AT 01:00 PM (EST)The Malaysian variant is known as "ayam masak merah" (literally, "chicken cooked red"). Here's a pic of what it looks like off of the stove or grill. We get the dried chilis directly from Malaysia (either packed to bring back when we visit or delivered by international courier by our family there). It's the locally grown chili that's dried prior to using for cooking. You have to take those little white seeds out or it's really hot! It seems the oil concentration is highest in the seeds.
