"OTCC- Azorean Spiced Beef Stew" |
This is where Tummy errrrrrrr any way....I'm not a grand type of cooker, I prefer one pot methods and simpler recipes. I chose this stew to try because it's freaking cold here already. This is a crockpot recipe, feel free to do it on the stove top if you prefer or maybe even in the roaster. (I don't know, I'm a simple cook remember.) 2 lb beef chuck stew meat (or whatever cut you prefer) 5-6 cloves garlic, smashed and chopped 2 potatoes, chopped in to 1 inch cubes 3 green onions, chopped 3 cups beef stock 2 tomatoes, chopped 1 cup baby carrots 2 T kosher salt 1/2 T red pepper flakes 1 tsp all spice 1 bay leaf 1 tsp cumin 2 cinnamon sticks Throw it all in the crockpot and float the bay leaf and cinnamon sticks on top. Cook on low 8-10 hours, high for 6. This is from the crockpot lady's site, I'll be adding a sweet potato cubed to mine. mmmmmm I love sweet potatoes. Feel free to add or subtract veggies, use what you have or your own favorites for stew. Also you can just use 1 lb of meat to make it lighter, and add more veggies. I'll be using 2 lbs since DBF is a big boy. LOL Serve with nice warm bread or rolls. Want a quick and easy dessert? (Nutty if you're lurking shield your eyes on this one.) Pumpkin Fluff 1 can pumpkin 8 oz Fat Free Cool Whip 1 box sugar free/fat free butterscotch or cheesecake pudding mix pumpkin pie spice Mix the pumpkin, Cool Whip and pudding mix all together. Season to taste with the pumpkin pie spice. Serve with graham crackers or reduced fat Nilla wafers. Even my extremely picky DD loves this stuff. We remain free to dislike anyone we please, but the Constitution continues to demand that we respect their civil rights.- MO

LAST EDITED ON 10-16-09 AT 07:03 PM (EST)Pardon the silly question: Does this cook for 8-10 hours on low and then an additional 6 hours on high, for a total of 14-16 hours? or 2-4 hours on low and then 6 hours on high for a total of 8-10? ETSay: I think my picky husband would actually eat this, without the tomatoes. Maybe I can sub some crushed tomatoes for the flavour. Sig by agman, bouncy by IceCat

Sounds good.Picked up some spices at the Fresh Market while I was there getting Sushi (I like theirs better than the grocery store). I don't know if I'll try sweet potatoes in it as I'm not sure I'd like that, but while at the Market I saw something with Sweet Potatoes in it and I had to take it home and try it. *covers Slicey's eyes* Sweet Potato Pancake Mix....and they were good for breakfast this morning. http://www.brucesyamsbrand.com/pancake-mix.html Haunted by Tribe!

LAST EDITED ON 10-17-09 AT 04:46 PM (EST)Well guess what I had for a late lunch today! I customised this one quite a bit, I couldn't get braising steak, so I used neck of lamb instead, I used new potatoes instead of chopping up big ones, only used a teaspoon of salt. a mix of cayenne pepper and smoked paprika instead of the red pepper flakes, forgot to put in the bay-leaf and cinnamon until halfway through cooking, and cooked it on the hob browning off the meat and frying the onions and garlic before adding the other ingredients. I liked it, overall the flavours were very enjoyable, the spices worked well with the lamb, and there was a hint of sweetness which was delightful. Arrrr Cap'n!

Verdict: de-freaking-licious.My apartment smells wonderful, and I am in the process of enjoying a much-needed bowl of stew (it is ridic. stew weather here).
Some modifications, of course. I dredged the beef in flour and browned it first, and rather than baby carrots, cut up big carrots. Also, I have a relatively small crock pot, so less stock was used. At the last minute, I added tapioca powder for thickening purposes.
No bulgur around the house, but, hey, a baguette! THANK YOU BREEZUS! Because this is closer to how I look...

30. "RE: OTCC- Azorean Spiced Beef Stew" |
My in-laws decided to visit yesterday, so I threw the roast I had into the crock pot and used this recipe. Because I had visitors and was rushed to serve, I forgot to take a picture! My comments, given that I'm not a big beef roast/beef stew fan, are below. It got thumbs up from my in-laws and Chris seemed to enjoy it. I enjoyed it about as well as I enjoy any beef stew/roast, but it was fun to have something with some sweeter spices. What I liked The cinnamon and cumin addition and the ease of both making this and cleaning up was great. What I tweaked I used a whole roast, more cinnamon, onions instead of green onions, and browned my roast first. I also added cornstarch/water at the end to thicken it. Would I make it again? Maybe not this specific recipe, but the basic idea I'd do again. It made me want to start adding cinnamon and cumin to stew/roast sometimes. I didn't love the allspice part, so would probably not add that again. Other notes I made acorn squash with a recipe in Real Simple this month. It was a recipe for butternut squash, but I had an acorn. From memory, it's basically roasting squash and shallots in the oven with olive oil, salt and pepper (375 for about an hour). Boil some apple cider until reduced, add apple cider vinegar and parsley. Pour over squash. I added a dash of maple syrup, but probably shouldn't have in retrospect. I should have added a few chunks of whole apples. Thanks for hosting this week, Breezy! -A Tribetastic Creation

I have this in the crock pot today. It smelled amazing instantly - I can't wait for the cooking smells to fill up the house. This recipe came at a perfect time for me. My kids have colds and I pulled an all-nighter last night to get some work finished since my prospects of doing it during the day are nil. I love not having to think about dinner now that the stew is crocking. A few hacks: I forgot green onions. Actually, I haven't been to the store so I didn't really forget them so much as I just don't have any. I used a yellow sweet onion. I didn't quite have two pounds of stew meat, so I increased the potatoes and carrots to compensate. I might have over compensated - the crock pot is very full. I can't find my red pepper flakes so I crushed up two dried chile piquins with the mortar and pestle and threw those in instead. I used one 28-oz can of diced tomatoes because I didn't feel like chopping up the couple of fresh tomatoes I have left. Because I used canned tomatoes, I reduced the amount of salt I put in. Can't wait to eat!

Here's my photo:
It was delicious. Mr. Fro, who doesn't really care much either way for beef stew, thought it was very flavorful and enjoyed it. My daughter even ventured a bite.
As it turned out I did over-do it with the potatoes and carrots and as a result, 6 hours on high was not enough, so I had to finish it up on the stove. Next time I'll just get the crock pot started earlier. Thanks, Breezy! Cake Haiku. Motion by Snidget/Shrunken down by Moonbaby/Ice Cat legal-sized.

53. "This was really good! (Lots of pics!)" |
We made this last night. (This has been such a nice thing for my DH and me to do on a Sunday. We've really been enjoying this.)Changes we made: We used two sweet potatoes and one white. If you are a fan of the sweet potato, don’t bother with the white. Every time I got a piece of the white, it was a disappoint compared to the sweet. We used London Broil, floured and browned. YUM!!!! We sauteed the garlic and onions in olive oil and then deglazed them with a little red wine. We also added: celery, one tablespoon of brown sugar (Thanks Boo!) and maybe an extra teaspoon of cinnamon. We cut: the allspice in half (thanks weltek!) and cut the salt by half. It was absolutely delicious. And since half the fun for me is the pictures, I took a couple extra. Pre-prep.
Deglazing:
The meat ready to go. (Meat is touch to photograph! Ewwww!)
All ingredients aboard!

54. "How to bastardize Azorean Spiced Beef Stew" |
Before I begin I just want to establish that we started this club for fun purposes. The goal was to have fun, right? M'kay.Once I got beyond all the roadblocks, I had fun with this one. Roadblock #1 - I don't own a slow cooker Roadblock #2 - DH hates stewing beef. As a matter of fact he hates steak, and most things beef, wth the exception of ground beef. Roadblcok #3 - DH is Portuguese and he is from the Azores and had never heard of this dish before. He was quite surprised by the spices involved and thought it was more Moroccan than Portuguese. Here it is:
Here is the "fun" I had. I used chicken tenderloins (that little tender thingy that is attached to the breast) instaed of stewing beef I used reduced salt chicken stock with a package of beef boullion thrown in for colour I used large carrots instead of babies I reduced the salt to 1/2 T I actually surprised myself as this version was incredibly tasty, and although DH's face was kind of screwy at the ingrediants, he said he would ask for this again. compliments of agman's little shoppe of siggies

I wasn't going to bump this but since Boo hasn't made it yet either, I decided to.I made this yesterday. I was in the city all day so I made it before I left so I wouldn't have anything to do once I got home! It came out really well and I enjoyed the cumin, cinnamon and allspice flavor. I used London Broil that I browned before I added it to the crockpot. I didn't like this cut of meat as well as I expected; it didn't fall apart like stew meat does but overall the flavor was really good! I used half sweet potatoes and half baby red bliss potatoes, added a 1/2 cup of red wine with the stock and some corn starch at the end to thicken it. I don't know what possessed me to use cayenne instead of red pepper flakes, but the gravy was too spicy for me (I'm not a big spicy girl), but DH loved it and sopped up all his gravy and my left-over gravy with the bread I had bought to go with it. I froze the leftovers and DS and DH can have it some time over the holidays for lunch. Thanks Breezy! (What is the crockpot ladies website you mentioned?)

66. "Sunday Dinner" |
LAST EDITED ON 11-16-09 AT 03:05 PM (EST)I finally made this on Sunday. It got mixed reviews in my house. I liked it. DH, in spite of eating two helpings, told me he just preferred my plain old beef stew. Perhaps he was still sore from being knocked out of a pool by picking the Steelers. I cut the All Spice, Kosher Salt and the Cumin in half and added brown sugar. During a taste about 8 hours in, I added a little more brown sugar for a total of about 4 Tblsp. I also added the other half of the onion from Karchita's Mac recipe from Saturday night and used 3 cloves of garlic. This is a bad time of year for tomatoes, so I used a can of diced instead of a fresh. Normally when I think of "stew," I think of it with a thicker sauce. I didn't thicken this because I like to drink the juice. Maybe DH would have been happier if I had. Oh well. On to pics:
Oh, and I loved the sweet potatoes! Samboobree, brought to life by Arkie

The first thing I said to myself when I posted the picture was, "Oooh, you really should have cleaned up the spatter along the edges of that white plate." I always try to channel my inner Chef Ramsey when plating the final product. I love any chance I get to use my camera. The only problem with shooting in the kitchen is the light is so low this time of year and the flash always makes everything looks like it's sweaty and shiny. Blech. Proud member of The Tribe.
