The mango salad recipe and an upcoming picnic have me thinking again about potluck recipes. I know we've had these in the past. Any new good ideas to share?I am making a Smores Cake recipe (from one of those Pillbury magazine stand cookbooks) for the first time this week. It's for a family cookout where there will be five kids, so it seemed like a good plan. I'll share how it turned out this weekend.
Smores Cake
1 cup Pillsbury's Best All Purpose or Unbleached Flour
2 cups graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup firmly packed brown sugar
1/2 cup shortening
3 eggs
1 cup milk
1 cup miniature semi-sweet chocolate chips
7-oz. jar (1 1/2 cups) marshmallow creme
Instructions
Heat oven to 350 F. Grease and flour 13x9-inch pan.
Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, graham cracker crumbs, baking powder, soda and salt; set aside. In large bowl, beat brown sugar, shortening and eggs until well blended. Add dry ingredients and milk; mix at low speed until well combined. Beat at medium speed 1 minute. Stir in 2/3 cup of the chocolate chips.
Spread batter evenly in prepared pan. Bake at 350 F. for 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
Meanwhile, in small saucepan over low heat melt remaining 1/3 cup chocolate chips. Spoon teaspoonfuls of marshmallow creme onto top of warm cake; carefully spread with knife dipped in hot water. Swirl melted chocoalte through marshmallow creme to marble. Cool completely.
