Hang on, is it that time already?

Time for something springlike!

EVOO
5 medium potatoes, peeled and cut into rough 1" cubes
1/2 yellow onion, chopped
1/2 red bell pepper, chopped
Clove garlic, minced
2 oz bacon cubes/lardons
5 eggs
5 - 10 Sundried Tomatoes chopped
Grated cheese
Herbes de Provence
Salt
Black or White Pepper

Preparation

Steam or boil the potatoes until they are cooked, but not falling apart.

Heat the olive oil in a deep frying pan, fry the garlic, onion, bacon, bell pepper and potato until the onion is soft and the bacon and garlic are cooked.

Beat the eggs with the salt, pepper and Herbes de Provence and then pour them over the mixture in the frying pan along with the chopped sundried tomatoes, turn the heat down, and turn on your grill

When the Tortilla is firm to about 2/3rds of its height sprinkle the cheese on top and pop under the grill until the egg is firm almost all the way through.

Remove from grill and allow to cool (it will cook on a bit as it cools)

Serve warm or at room temperature, I enjoy it with a light green salad.

All quantities changeable for personal tastes of course.

This particular recipe from an attempt at making a quiche when the pastry went wrong.

A favorite Spanish dish. Many variations, probably as many as there are cooks. Thin, thick, small, large... but all so good.

Thanks for this, this is the first version I've heard of that you don't have to flip, which for the pie sized version takes a very talented and experienced cook to perform well. I've tried, and failed more often that I've succeeded. Even then, as a hash it tastes good. The bits that fall on the floor can be discarded if one is picky about those things.

Often served in Tapas bars in Spain. So good.

The key to not flipping (which I have always had problems with) is a lowish heat once the egg has been added, this means that the egg should cook without burning on the bottom.

and using precooked potatoes helps immeasurably!

Tortillas show up on menus in tapas bars in the US, too. And I have seen (and eaten) them in quite a few good restaurants in Mexico.

However as with the rice add more, remove things, add different things, this is very much a blank canvas

This sounds very good. I was going to make this morning, but DH left early for golf, and my regular store does not have Herbes de Provence. I will shoot for next weekend.

Don't worry about the Herbs, salt is the most important addition, I add it because I have plenty to hand, try using thyme or Marjoram or Rosemary (just a small pinch)

I thought this was absolutely delicious and very easy. I do like tortillas on occasion, but have never made one at home. I used what I had on hand, and that was potatoes, kale, onion, garlic, salt, pepper, lots of olive oil, and eggs, of course. I cooked it, covered, on low for about 20 minutes, let sit with the heat off for about 5-10 while the broiler heated up, and broiled for 5 minutes, which was just a hair too long as it was starting to turn dark brown.

We had it for supper tonight with ham and a lettuce salad. This would be a fantastic brunch dish.

DH wasn't quite as thrilled with it, but he is sick of kale. I grow it in the garden and love it, but it is kale season and we have had quite a bit of it lately.

Made this this morning - only addition/changes was I added spinach and left out the potatoes. Perfect meal for someone on a slow-carb diet! Was very yummy. Thanks Starshine. This will be a weekly meal in our house.

Starshine - I'm not eating anything white or what was bleached white and dyed back brown (except for some cottage cheese and cauliflower). I guess I could have added sweet potatoes.

Nigella uses tinned new potatoes!

Under the broiler now as I type.

Tried using pancetta (sp?). I've never cooked pancetta before and probably never will again. Too many little squares of fat balls. I plucked those out and ended up using regular bacon. Thankfully, we had some already cooked in the freezer.

Dead easy recipe. And good to heat up for Monday breakfast.

Very well received here. Mr. Qwerty is reserving judgement until he finishes his 3rd helping

Despite working through an aura migraine and dumping warm bacon grease on me (which has made me very popular with Sam) this was easy to make. The girls would prefer it without the peppers and sundried tomatoes (heaven forbid any veggies get into their gut)

Thanks Starshine, even I enjoyed it and I am not a fan of eggs. This is something I will make again.

I'm glad you posted this recipe, as I've seen versions in cookbooks and on menus, but have never tried something exactly like this.

It was a little heavy on the potato for me and I didn't add enough salt (and would also add some garlic and onion powder next time). I needed to heavily resalt the finished product and use some sauce to punch up the flavor. Not a losing recipe, just will take some tweaking to get it right for our house.

Having trouble adding pics..sorry!
