"OTCC - Ginger Lime Chicken Salad with Sweet Potato Fries"

I guess I am up and I am feeling the pressure.

This recipe is from an asian noodle cookbook and called for a deep fried nest to be made of noodles. Deep frying anything scares the bejeebus out of me, so I ditched the noodle basket for some nice pumpernickel bread. Everyone is safe and no one gets hurt

I like this recipe because it is fresh tasting and reminds me of spring. And easy too . The sweet potato fries are actually 'good for you' and don't overpower the chicken salad.

OTCC - Ginger Lime Chicken Salad with Sweet Potato Fries

Ingredients
6 TBSP (90 mL) sour cream (I used light - 7%)
6 TBSP (90 mL) mayonnaise or Miracle Whip (I used light Miracle Whip)
1 inch (2.5 cm) piece fresh gingerroot peeled and grated*
grated rind and juice of 1 lime
4 skinless, boneless chicken thighs or 2 or 3 chicken breasts poached and cooled and cut into thin strips
1 carrot peeled and grated
1 cucumber cut in half lengthwise and seeds removed and sliced
salt and pepper to taste
1 TBSP (15 mL) finely chopped fresh cilantro
1 TBSP (15 mL) finely chopped fresh mint
1 TBSP (15 mL) finely chopped parsley
several fresh basil leaves, torn
Really nice bread such as pumpernickel, rye, sourdough
romaine lettuce leaf (optional)

Method
1. Combine sour cream, mayonnaise, ginger and lime rind.

2. Gradually add the lime juice to taste.

3. Stir in the chicken, carrot, cucumber, and salt and pepper.
4. Cover and chill.

5. Just before serving, stir in the chopped mint, cilantro and parsley.

6. Spoon chicken salad onto an interesting bread (toasted optional).

7. Garnish with torn basil leaves.

Notes:
*I grate my ginger roughly, but I like ginger
The first time I made this I used dried mint (1 tsp instead of tablespoon) and sprinkled dried basil on the salad. Because I was making it for you, I thought I would spurge for fresh (hey -- you are worth it!). It was good either way, but the fresh basil made for an interesting addition that I really liked.
- if you are storing this in the fridge overnight, it will get a little watery. Just drain before serving.
- I didn't use salt and didn't miss it.
- it would be better (and safer for your fingers) to use a large carrot instead of baby carrots, but Mr. Qwerty was kind enough to do the shopping so I wasn't going to quibble.
-I found I had sauce left over, but I tend to like my chicken salad on the dry side.


Sweet Potatoes with Honey Lime Dipping Sauce

Ingredients
1 or 2 eggs (whites only)- depends on how much fries you have
1 - 2 tsp (5 - 10 mL) flour (apparently rice flour works really well too)
Parchment Paper
Spices (salt, pepper and any of seasoning salt, paprika, chili powder, cinnamon etc)
Honey Lime dipping sauce
1 TBSP (15 mL) Honey
Juice and grated rind from 1 small or medium sized lime
1/4 -1/2 cup (50 mL - 125 mL) sourcream (I used light)
pepper to taste


Method
1. Preheat oven to 425° F.

2. Line a baking sheet with parchment paper.

3. Peel the sweet potatoes (or leave peel on, if you prefer). Cut in very small "fries" (the smaller, thinner the better) and place in a large bowl.

4. Whisk the egg whites until just lightly frothy.

5. Pour egg whites into a ziploc bag (or large bowl) and add the cut sweet potatoes. Close the bag and shake to evenly coat potatoes in egg whites.

6. Open the bag and add a bit of all-purpose flour (just one or two teaspoons, again depending on how many potatoes but not too much), close and shake to coat.

7. Place potatoes carefully on the baking sheet, shaking off any excess coating. Leave as much space between potatoes as possible. Try not to overlap any or crowd the sheet. Cook on two sheets, if necessary.

8. Sprinkle potatoes with salt and pepper and/or any other spices you like

9. Bake for about 20 to 30 minutes, until cooked. Don't wander too far while they are cooking, so you can keep an eye on their progress. The cooking time will vary depending on the size of your fries and they go from lovely to burnt very quickly. If you are baking two sheets, place racks in top and bottom thirds of oven and switch their position half way through baking.

10. Mix together the lime rind, juice, sourcream and honey in a small bowl.

NOTES:
The dipping sauce measurements are approximate. I just kind of threw the ingredients together.

The fries that worked the best tended to be cut about 1/4 inch thick.
I sprinkled mine with salt, pepper and a little bit of cayenne. They won't turn out deep fried crispy, but they have a nice, non-mushy texture.

The first recipe I tried used olive oil, tinfoil and a hotter oven and quickly caused the smoke detector to go off at 11:35 PM. I learned my youngest two kids can sleep through the smoke alarm.


I am not even going to go into "What is the difference between Sweet Potatos and Yams" when the stores don't get it right most of the time.

And I promised I would mention that parchment paper is not the same as wax paper -- I guess the author's daughter found that out the hard way.

Yum Qwerty - I make this chicken salad alot during the summer minus the sour cream. In the summer I try to stay away from bread so I usually cut a cantaloupe in thirds, slice off the bottom of each outside third so it sits on the plates and then load it up with chicken salad.

I've not had it with basil. I bet it's great. *hops

And anyone that loves sweet potato fries as much as me gets cudos!

I'll be craving summer even more now!

I would totally love to add grapes and apples but DH gives me a resounding no. He doesn't like fruit in his meals. He feels that fruit should only be eaten on it's own. Spoil sport.

*hangs head in shame I'm obviously not an expert as I've used and type of seedless grapes. I have added pecans before - even raisins. But never dill. Maybe this summer as I'm planting a good size herb garden.

I promise I will be making this this coming weekend. DH has a terrible sinus infection so we've been eating soup the last couple of days. This is a perfect recipe for a warm, sunny, Saturday lunch.

P.S. I don't think a freight train could kill the OTCC.

Mmmmmmm. Made this last night. I will totally make this again in the summer. It's so fresh.

I bought some dark rye buns loaded with seeds. Sliced, olive oil and toasted in the oven made a perfect raft for the chicken.

And I was thrilled with the sweet potato fries. Everytime I've tried to make SP fries they turn out woobly.

These were crisp and tasty. I soaked them in ice water first, then dried and applied the egg wash and flour. I dressed with paprika, S&P and caraway seeds.

Left over chicken will find its way to my lunch plate with some baby mixed greens and a couple of chunks of cheddar.

Thanks qwerty! A lovely fresh meal for a blustery winter day. Totally a keeper.

Sorry - no pictures - the camera is still packed away in our luggage. I'm not bitter, really, I'm not.

I don't think a food thread has ever fallen off the face of earth in OT but I know how you feel. I was very nervous posting a recipe over the holidays. I thought people might not have time for it!

I am looking forward to making this and I think I might pair it with Tkit's focaccia recipe. (Thanks Tkit for posting it!)

Looking forward to using all those fresh herbs - cilantro and basil are my two favorites!!

I poached some chicken breasts but need to go to the store for some other things before making it.

ETA: I also still have some olive-caper tapenade foccacia bread with minced onions and I may use that with it that I made yesterday. It turned out really yummy. Used 1 cup whole wheat flour and 2 cups all purpose.

The dissapointment thread. No, not your recipe, qwerty! I went to the grocery store tonight (it's my regular Madison grocery store day) to pick up the five ingredients I needed. They had NO limes (they were on sale and apparently someone had a Gin and Tonic need to feed) and one lonely, sad looking package of basil. What grocery store doesn't have limes nor basil?!

And I was so distracted I forgot the sweet potatoes. Sigh. Tomorrow I'll try again!

I made the chicken salad tonight. I had it on a really nice lightly toasted bagel because I didn't have any other nice bread. It was so. good - light and fresh. Yum!

I made the sweet potato fries yesterday because my kids wanted fries for dinner, so I just made mine a little differently. I like how they came out, as you said, not deep-fried crispy, but with a nicer crispiness than I usually get when I try to make sweet potato fries.

I made this at my Mom's yesterday. No pics as I forgot the camera.

Everyone liked the addition of the basil! That's a keeper and something I would have never added had it not been for OTCC! Thanks Qwerty!

The sweet potato fries were a hit of course. I did them with some garlic, cayenne, rosemary and sea salt. I didn't do the dip. Because I forgot about it. Will try the dip this summer.

DH bought steaks from Costco on Friday night. I mentioned this on FB in one of Asrai's posts: Costco has great meat!

I made the sweet potato fries last night as a side to our steak. I will make the chicken salad at some point soon - especially since spring is coming.

I used 1.5 potatoes. They were big. I used 2 egg whites, a tsp. flour, a little salt & pepper and then I just sprinkled them with a blend of cinnamon sugar that I have made up for when we have baked sweet potatoes. No dipping sauce needed. I wish I had used both entire potatoes. They were good.

As you can see, DH still has tools in the kitchn. And yes, that is still a Christmas basket on my counter holding my napkins. My sister-in-law is making some window treatments. At some point we're going to change out the counters from the blue to black. I like the white appliances - they will only change if they can all be stainless. There is still some caulking that needs to be done and some baseboard painting to be done. Eventually I would like to change the lighting fixtures. I also need to find and mount a paper towel holder. The last thing will be a new wall calendar and framed items. It's been a long three months. That's what happens when you do it yourself.

Having a six-year old boy in the house kind kills that whole "walking around nekkid" thing. I actually like the nekkid windows. I love the light, I love the openess. We are only going with valances this time - just to cover up the top.

Our used to be formal living room is that color. I love it! So of course I love it in the kitchen, and can just imagine after the counters are black!

Oh we have stainless appliances, and I. Hate them. HATE THEM. I love how they look when they are clean, but hate the fact that you can see every single little finger print or smudge or anything. Literally, I have to clean the front of my fridge at least 4 times a day if I want it to stay nice and stainlessy. If I could re do our kitchen I would go for black appliances, at least with those you do not have to use a special cleaner to make them look nice.

I made this yesterday afternoon. I cannot even begin to express how much we enjoyed it. It was out of this world. My favorite recipe thus far. I know everyone keeps describing it as tasting ‘fresh’ and it does! Crisp, creamy, deep flavor but still very light. My DH had no interest in the recipe at all. It’s just not up his alley...until I made him try it. Not only did he have a sandwich for lunch, he had a bigger sandwich for dinner --the same day! I kept asking him if he would change anything and he kept saying “No, it’s perfection.”

This is the type of recipe that you would serve at an informal baby/bridal shower or bring to a summer outing to impress the attendees. I liked it so much that since I have leftovers of the majority of the ingredients, I’m making it again this week. I just need to pick up some more chicken.

We made the fries seperately as I didn't have time before the game. I was a little leary of the whole egg white thing but follwed the recipe anyway. We used Tastefully Simple's season salt (waves to weltek) and they turned out REALLY well. We did cook the whole potatoes in the microwave for a couple of minutes first. We also put the baking sheet in the oven beforehand so when the fries hit the pan they started to cook and crisp immediately. Mmm! We didn't make the dipping sauce because we were pooped by that point.

I have a bunch of pics that I still have to upload. I’ll do that tonight. I was trying to make this, do laundry and get everything done in time to watch the hockey game which is why my ipod went through the wash.

Thank you qwertypie. It was truly wonderful and something that I NEVER would have tried on my own (or my DH for that matter.) In addition, I have decided to start an herb garden so I will have everything on hand to make this whenever. DH even pulled all the seeds out for me last night.

OTCCers, make this! You will not be disappointed. Pics to follow...

LOL - because of OTCC and all the fresh herbs used I called Saturday for a load of topsoil to be delivered for a bigger raised bed. I've had a smallish herb "plot" - meaning random plantings but now I'm going whole hog.

And you're right - everyone should try this. It's really great.

I made this the other day. Didn't take pictures as I was hungry.

I screwed up and used a whole egg for the sweet potato fries and that worked just fine. I wasn't going to waste the egg so just went with it Used a bit of salt and pepper as well as Cinnamon and nutmeg.

I ended up julienning the carrots as the grater hid from me and I already had the mandolin out for all the other prep.

Turned out really well and something to make again.

I am thinking of trying it with tuna instead of chicken while I have all the ingredients around.

Did it with a can of tuna and cut back the amount of the other ingredients to work. Turned out really good and was a nice change of pace from my usual tuna salad.

My sandwich and fries look just like all the others, so I didn't take pics.

The sandwich was good, Nolay really liked it. I'd wait until summer to make it again, as it just seems more suited to warm, sunny days instead of snowy dull days. I think I'd try it on cold asian noodles next time, or just a chopped romaine salad. I didn't use all the dressing, as I, too, like my chicken salad on the drier side.

I liked the recipe for the fries, as I, too, usually do the olive oil version and they burn quickly. These took the full 30 minutes to start browning. The egg/flour didn't really help crisp them, in my experience, but I think it did allow them to not burn so easily. I only salted my fries, as I love the nekkid flavor of sweet potato fries.

I used all my sour cream in the chicken salad, so I didn't make the dipping sauce. I bet the dipping sauce would make a nice summer salad dressing!

Thanks everyone for all the props on the pictures. I made the dish in the afternoon when it was sunny outside which in turn makes my kitchen much brighter. That made a huge difference.

Boo, your kitchen looks great with the red and the wainscoting! That's the color we had in our kitchen in Albany. And your kitchen looks so bright! Perfect for picture taking!

Yum, yum, yum.

First, I have to confess I almost didn’t make this. It seemed a little weird. Not the chicken salad itself, but the rye or pumpernickel part and on bread in general. Totally in my head, I am sure, but bread seems so non-Asian. And while I will eat sweet potatoes, it isn’t anything I normally go out of my way to do. So, I thought I’d make the salad and maybe try it with noodles. I don’t deep fry anything, either, so I thought about wet, slippery noodles and wasn’t so sure about the whole project. But in the spirit of OTCC, I thought I’d give it a try. And then at the last minute, I thought I’d try the sweet potatoes, too. After all, DH (aka “The Disposal”) will eat just about anything, so they wouldn’t go to waste.

Then, while perusing information on the packages in the Asian noodle section of the grocery store, I came upon some noodles from Taiwan with instructions to make little noodle nests. It said to boil and drain the noodles, spray two round cakes pan with oil, put a serving of noodles in each pan, spray them again and then them bake at 450 for 20-30 minutes. That caught my attention as the oven requirements are just about the same as for the sweet potatoes, and I decided to try that.

It was fantastic. Loved the salad. Loved the noodles. I even liked the sweet potatoes and DH loved them. A winner all around.

I followed the recipe except I subbed yerba buena (sort of like mint) for mint because I have it in the garden, and I skipped the parsley because it didn’t seem to need it. I used low fat sour cream and mayo. I put the noodle nests on the plates, then some lettuce, then the salad on top and it looked fantastic. Sorry no photos, but take my word, it was a great presentation. I will make this again for sure for company in the summer. It was really wonderful. Thank you, qwerty!!

OOOH - what brand of noodles? The noodle nest sounds doable. The recipe I had involved making noodle nests by holding the noodles between two large spoons while submerged in the boiling oil. Little too risky for my blood.

I will attempt a photo tomorrow, but no promises. I have had a lot of technical difficulties and it takes about ten steps to get a photo from my camera to OT. I am not sure I will have time.

In any event, I think any Chinese-style wheat noodles shaped like spaghetti should do the trick. Just bake them like I described above until just starting to brown around the edges.

I'm not sure how you're uploading or what issues you're having but I've been using this site to re-size: http://www.picresize.com/ and it's cut my uploading time way down. I usually have to re-size the re-size but it's quick.

I just stumbled onto these OTCC recipes, and am enjoying trying some new ones. I made this for dinner last night and everyone loved it! The ginger smelled so good, and was a good combination with the lime. We made the sweet potato fries too, although I should add a warning: freezer paper cannot be substituted for parchment paper. It started smoking and turning brown and almost caught fire in the oven. Woops! Thanks for the recipes, Qwerty!

I have grilled it, baked it, roasted it, fried it, crock-potted it, and pounded it, yet I've never poached it.

I am turning to this as a guide.

What did people here use as the liquid, as the spices, etc.?

I use water, generally speaking, and sometimes a splash of lemon or lime juice. When I do this, it's often for something like burritos, so season accordingly (mexican spices in that case). When I do it for something like chicken salad, I sometimes don't even season the water (again, I'll just add a splash of lemon juice. I find it really doesn't matter that much, as it doesn't cook for that long and the flavors don't really penetrate the chicken unless it's a strong herb/spice/liquid. And generally, I'm putting the chicken into something with big flavors/seasonings.

I have no memory stick for my camera right now - had to turn it in for yearbook pictures.

Very nice Querty.

I used baby carrots since that's what I had. I chopped them up in my Pampered Chef handy chopper. I also cut my cukes rather small.

For the cilantro, basil and mint, I chopped all of that up together and threw it all in. I did not do parsley.

I have no fancy bread. I've been eating it on Triscuits.

Normally I would feel guilty about bumping a thread on page 6 but this is the OTCC and it's important! It's also a reminder for peeps since warm weather is coming.

I made this tonight (and am so happy that I'm back on track again. I haven't made an OTCC recipe in weeks and weeks!) I made both the chicken salad and the sweet potatoes (but not the dipping sauce. DH isn't home so I didn't bother, I will try it the next time I make them.)

First the sweet potato fries. I really liked them; I added sea salt and ground pepper but would experiment with different flavors next time. But oops, I forgot to put parchment paper down and wondered why my fries were sticking to the pan! Fortunately I realized that before they were burnt to a crisp and could move them around the pan a bit.

I was eating the fries while I finished up the salad. I liked it a lot. Everyone's description of "fresh" is so true. We have some air conditioning in the house but not in the kitchen so I'm always looking for recipes like this for summertime-no oven use.

Tomorrow night DH will be home (finally, he's been gone for a week) and he's getting some savory crepes!

The salad looks great and I LOVE yam fries (more so than sweet potato)..

I would make one change..the rye bread. The salad is Asian in nature and just screams out for noodles. You don't need to deep fry the noodles, but a salad like this would be fabulous on a bed of rice noodles or soba noodles or even cooked spaghetti noodles.(just make sure to toss well so all the dressing soaks the plain noodles)

Personally, I would put it on the bed of rice vermicelli (the bean curd threads that you can buy in small nests that just expand while sitting in a bowl with boiled water poured over them).

I will definately make the salad! Sounds awesome.

I ate it on toasted Ciabatta (I think) and the crunch was really good with it, I think noodles would be good, but try it with a bit if crunchy toast as well

The noodle nests that I baked in the oven were crunchy and it was a very good combo.

I did take pictures, and I just may get around to posting them eventually. In the meantime, use your imaginations!

This has become a new favorite for me. I made the chicken salad tonight and am saving it for tomorrow. I'm also going to make the fries and dipping sauce tomorrow.

What a great summer dish!

Also, I am loving Breakstone's Reduced Fat Sour Cream - almost better than the original.

I made it again this past Sunday and we ate it for dinner 3 days straight. The guy who's pimping out our Nova engine was over on Monday. He's a true, blue southern dude (and VERY picky) and even he liked it.
