The prime rib roast turned out great! I convection roasted it in a gas oven for 2-1/4 hours (15 minutes at 500, then 120 minutes at 325) until the meat thermometer hit 150 degrees and then let it sit out about half an hour to let it cook more internally before serving.The marinade really made a difference to the flavor, particularly with the Malaysian chili mixed in. The marinade caramelized on the outside and the meat came out medium on the outside, medium rare on the inside to cater to the various tastes in the household. It was my first time cooking a prime rib roast, but I checked out a lot of recipes and instructions online before giving it a try. And now they all want it again for Christmas dinner!
