"Wine with Macaroni and Cheese?"
Posted by foonermints on 12-29-12 at 01:55 AM
I saw this recipe for Proscuitto Macaroni and Cheese appetizers. I wonder what kind of wine goes with macaroni and cheese?
I'm a barbarian, so I just tried some Kraft this evening with a Chardonnay. It's crisp, buttery goodness didn't work.
Ah, don't get me wrong. It did work, but not with the dish.Recipe? Here: http://www.chow.com/recipes/30113-prosciutto-wrapped-macaroni-and-cheese-cups
foonermint: a cheap imitation of the OTCC, but since Tummy is gone, you are stuck.

For my palate, I disagree with their choice, but I'm open to experimentation. So much for getting any work done this weekend.

I'm feeling much less barbarian-like after that bit about Jello with Champagne.

Personally, I would head over to the California Zin's or maybe a Sangiovese. I'd cool it down a bit, too; maybe 20 minutes in the frig.

Wouldn't cooling them down risk turning them into little encrusted rocks?I agree about a red instead of a white, but maybe a sweeter white whould have worked.

Kind of sweet? I wonder if one of those "Chianti-in-a-Basket" things would work?foonermint: the next stop is stealing a box from Bravie. The one with a Duck on it. Nothing like going Hog-Wild!

As red wine gives me headaches, I say white wine. I'm a troglodyte when it comes to fine dining anyway.

White wine with ham and cheese muffin things aren't really at the top of the scale, either.

Mmm, wine doesn't sound so bad - I'm assuming you didn't mix it in with the macaroni and cheese in lieu of the milk?
That takes me back a long way to when I still had a thriving head of hair and about to go to university. A bunch of us at my summer job had a day off from work so we decided to go over to a friend's parents cottage as the folks were away. It was on an island and it was starting to get dark, so we were stuck with an empty fridge and a bare bones cupboard that didn't have much more than Kraft Dinner macaroni & cheese and a couple large tins of fruit cup.
So... we ended up using vodka as our liquid base to lube up the mac and cheese since there wasn't any other liquids in the cottage, and just for symmetry, spiked the fruit cup as well. We figured the vodka would blend in better than beer would.
There's your food groups - carbs, processed fruits, fake dairy and potato (i.e. vodka). Oy.

You should pair the wine with the cheese that you use for the macaroni and cheese dish that you make.According to a site I went to, Champagne pairs nicely with cheddar, Chianti pairs nicely with provolone, and Chardonnay pairs nicely with Gruyere or Gouda.
So if you use powdered cheese a la Kraft, the correct pairing would be grape Kool-aid.

LAST EDITED ON 01-03-13 AT 00:13 AM (EST)I think we have an old bottle of Billecart-Salmon Brut Rose. Must be the same as grape Kool-Aid.
What kind of a moron buys rose champagne? Drunkies, I guess.
I'll try it and get back to you.

You got Grit Back? You deserve an after diner bottle of Port. And AK?. Zounds.
As for wine advice, two things. First, "Any 'straillian beya will do, mate, long as it a Fosta's". And two, never take wine drinking advice from a fish.
