Supposed to go to Cub Scout Pack meeting, but B & J went to Karchner Caverns in Southern AZ today, and might not be back in time.. (oh rats! not really!)

I think dinner's going to be something made of chicken, because that is what's in the fridge thawing... maybe chicken enchiladas!
The recipe I use is really rich, but really yummy... with Cream cheese, onions, pimentos and chicken inside, and whipped cream on top! Not the sweet stuff, but just whipped cream! If anyone wants the recipe, say so, and I'll post it...

Well, sadly, I didn't get to have these for dinner, it ended up a quick trip to Taco Bell, and watched the Amazing Race on GSN.

However!! It is my 100th Post! Yippee!
Not quite a milestone as others have reached, but a reason for me to celebrate!

Chicken Cream Enchiladas

2 Tbsp Butter
2 Lg onions, thinly sliced
2 cups diced, cooked chicken
2 3 oz packages of cream cheese, diced (or 1 8 oz pkg works)
1/2 cup chopped pimentos (smallish jar)
12 corn or flour tortillas (we like flour!)
2 cups shredded Monterey Jack cheese
2/3 cup whipping cream

Saute onions till soft. Add to chicken. Add pimentos, cream cheese. Mix with two forks. Season to taste.
If using corn tortillas, heat in a pan with a bit of salad oil until soft.
Spoon 1/3 cup of mixture on tortilla, roll to enclose.
Whip the whipping cream, (don't add sugar!) and spoon over the enchiladas. (spread it out!) Top with cheese and back @375 for 20 minutes.

If you are going for Lo-cal, this is not.. You can add green chiles if you like, but I don't care for them!

Dinner is popcorn (real popcorn made on the stove...none of that microwave crap). Big Brother just ended and the live feeds just came back, so that's where I'll be the rest of the night. No more TV tonight because it makes it too hard to hear the feeds. The cat just got a new box, though, so I'm sure that he'll keep me entertained when the feeds are boring. (He also got one of those huge cat condos, but he's more interested in the box.)

I had a taco. That's all. Just one. Caught a rerun of Spongebob with my little one. Discovered that my dog is gonna have pups. Yikes. Um, worked 12 hours today. God, my life is boring...

BBQ'd something or other.

Might check out "Most Haunted" at 8"00 pm but more than likely will get roped into staining and varathaning mouldings for this god-forsaken bay window.
