Did you miss the last one? Well, Tummy posted her recipes in this thresd. See post #6 and #18 for bacon wrapped stuffed jalapenos and Korean short ribs.

For my turn, I decided to give you all a way to get rid of your turkey day leftovers!

TURKEY CASSEROLE: This is a spin on the normal green bean casserole.

Ingredients:

2 - 3 cups of white rice
Leftover turkey - in small chunks
1 (10 3/4 oz.) can cream of mushroom Soup (or cream of turkey)
3/4 cup milk
1/8 tsp. black pepper
2 (9 oz. each) pkgs. frozen cut green beans, thawed; or 2 cans (14 1/2 oz. each) cut green beans, drained; or 4 cups fresh, cooked cut green beans.
1 1/3 cups FRENCH'S® French Fried Onions


Cook rice according to package.
Mix soup, milk and pepper in a 1 1/2 -qt. baking dish.
Stir in beans, rice, turkey and 2/3 cup French Fried Onions.
Bake at 350°F for 30 min. or until hot.
Stir. Top with remaining 2/3 cup onions. Bake 5 min. until onions are golden.

***If you have leftover green bean casserole, then you can just add turkey and the cooked rice to it for a one dish meal. Be sure to add extra milk and soup to account for the rice which will absorb the liquids.


LEMON BARS: These cookies are made in 2 steps

1st layer

3/4 c. butter - softened
1 1/2 c. flour
1/3 c. powdered sugar

Cream together butter, flour and powdered sugar. Pat into a 13x9 pan. Bake 18 minutes at 350 F.

2nd layer

4 eggs
2 c. sugar
4 tbs. flour
1 tsp. baking powder
pinch of salt
6 tbs. lemon juice

Mix all remaining ingredients and pour over the baked 1st layer. Bake an additional 25 minutes. Sprinkle with powdered sugar.


Shortbread Cookie Bars - incredibly easy and soooo good!

Ingredients

1 c. sugar
1 tsp. water
1 lb. butter - softened
4 c. flour
1/2 tsp. salt

Put the sugar in mixing bowl and sprinkle in water.
Cream the butter into the sugar.
Add flour and salt and knead with hands until the dough pulls away from the side of the bowl.
Press dough into 13x9 pan.
Prick with fork at about 1 inch intervals.
Sprinkle with colored sugar, if desired.
Bake at 275 F for 1 hour until pale and golden.
Cut into squares while hot.

Looks good! We have a bunch of leftover chicken, I may do this with chicken instead.

I am so making the Shortbread cookie bars as soon as my butter softens. I keep it in the freezer so it will be a few hours but when I do it this afternoon, can I post pictures for you? I know I am technically not in the OTCC but I do know it quite intimately

Plesae keep in mind that I am not as talented in the kitchen as the rest of you peeps. I did measure my pan and since it was glass I left it in the oven about 20 mins longer than the recipe stated.

Sugar in bowl

Salt

Flour and salt sifted together (I always sift)

Butter and sugar creamed

Ready for the oven

Fresh out of the oven

Plated

They came out thicker than I thought they would but I must say they ARE yummy!!

Taken with my cell phone. It really does take nice pics for an old school cell phone. And thank you for not pointing out that I forgot to put "report" in my subject line when I posted them, I realized my faux paux after I hit enter.

I am still new to posting to the OTCC thresds.

I did, however, find orzo in my grocery shopping trip yesterday and am going to try THAT recipe. Who knew they also sell mini pasta now? The little bow-tie pasta is adorable, for an uncooked pasta.

From what I recall, there are virtually no rules for the OTCC other than to have fun. You don't have to put anything in the RE: line other than what you want.

Turkey caserole: Done! Not sure why I had so much green bean caserole left over this year. Next year I'm not making it.

Going to do these lemon bars because I love lemon bars and need a good sweet to take to a meeting next week.

Turkey Casserole
It probably doesn't really count as making this recipe, because I majorly tweaked it to use what I had on hand (mixed veg instead of just green beans, no french fried onions, used little pasta shells instead of rice, and used leftover potato leek soup instead of cream-of...) so I'll just say that Sunday's dinner was inspired by this recipe and leave it at that.

Lemon Bars
These are in the oven now. I cut the recipe in half and used an 8x8 pan because I will almost assuredly eat the entire pan of them, probably by the end of the night tonight.

Fro's Tweak Alert: I made lime bars instead of lemon, because I had four fresh limes in the fridge. I added the zest of the limes to the lime mixture. (I bet it would be good added to the crust, too, come to think of it.)

I was thinking, while mixing it all up, that this is kind of a good recipe canvas for any sort of citrus fruit bars recipe. Lime is a pretty safe sub for lemon, but I might have to make this again and try some different combos and maybe add some spices to the fun. Cranberry-tangerine? Or maybe orange-clove? Lemon-cardamom?

I know. But my resolution last year was that I was going to dramatically reduce the number of trips I make to the grocery store each week so as to decrease my opportunity to impulse buy. So. . . If I don't have an ingredient (or five) I barrel ahead anyway making substitutions.

They're not all winners.

So, how did the lime bars taste? (Mr. Qwerty is always bugging me to put lemon or lime zest in my baking)

They taste very good! I like the added zest in there because it emphasized the tartness of the filling a bit. I like the combo of the sweet crust and the tart filling. If anything, I would even like it a little more tart.

I did overbake them, though. I didn't think to reduce the baking time to account for my smaller pan. I took them out after 20 minutes but they really could have come out at 15.

I guess I'll have to make another pan of them!

Whenever I make a key lime pie, I always use the Keebler Shortbread crust instead of regular or graham cracker. It make a huge difference and is oh so good.

"Lemon Lime Bars"

YUMMMMY!
I think I would add an extra TBSP of lime juice (but the rest of the family says NO WAY!), just because I like desserts quite tart.
The bars came out a bit flatter than I had thought, but I was using a pampered chef oblong pan which is a bit bigger than 9x 13.
The texture of the bars is sublime. It goes really well with ice cold milk or hot coffee.

OMG -- Pure Evil Goodness! I think this is the most calorie dense thing I've ever made.

I should have made a 1/4 slab. I think I'll get Mr. Qwerty to hide them so I can't eat the whole pan.

Wow, I've never really ventured into the OTCC threads before, but this one grabbed me. Woe mentioned something about rules. Is there a short list of rules I need to be aware of for replying in these threads? Have I broken them already???

The shortbread and Lemon Bar recipes look so good, I think I will try them in my holiday baking.

The lemon bars are very good and very easy to make. Just don't leave them in the oven for an hour when it's only supposed to be 25 minutes otherwise you will be making them a 2nd time.
