"OTCC: A couple of desserts"
Posted by arkiegrl on 07-01-11 at 07:59 AM
LAST EDITED ON 07-01-11 AT 08:00 AM (EST)It's hot, and I don't feel like cooking. So, for my turn at the OTCC, I'm giving you a couple of easy desserts that don't require a burner, grill, oven or even a microwave.
The first is one I got from Taste of Home magazine several years ago, and is one of my favorites:
Chocolate Cherry Torte
56 chocolate-covered graham cracker cookies (about 1 pound), crushed
1 cup butter, melted
2 envelopes whipped topping mix (Dream Whip)
1 cup cold milk
1 teaspoon vanilla extract
1 package (8 ounces) cream cheese, softened
2 cans (21 ounces each) cherry pie filling
Set aside 1/4 cup crushed cookies for topping. In a large bowl, combine remaining cookies and butter; spread into a 13x9 dish. Set aside.
In a large bowl, combine the whipped topping mixes, milk and vanilla; beat on low speed until blended. Beat on high for 4 minutes or until thickened and stiff peaks form. Add cream cheese; beat until smooth.
Spread over crust; top with pie filling. Sprinkle with reserved cookies. Cover and refrigerate for 12-24 hours before serving. Yield: 12-16 servings.
This second one I got from a co-worker. I haven't actually made this yet (doing that later today or tomorrow), but when she makes it, it's delicious!
Banana Pudding
In large bowl, mix (in this order) 3 small packages of instant vanilla pudding (either French vanilla or plain or combination of), 3 cups milk, 8 ounces sour cream, 1 carton Cool Whip (8 ounces), 1 tsp vanilla. Whisk together until well blended. in 9 x 13 pan, put a layer of vanilla wafers, top with 3 bananas, sliced. Pour half of pudding mixture over this, repeat layers. (You will use 1 12 oz box of vanilla wafers and 6 bananas.)

I will be making the Chocolate Cherry Torte for dessert with the Moraccan Shrimp I still have to make. After the bout with food poisoning I'm still choosing to be on a liquid diet.
Are you saying you've never made Banana Pudding, or you've never made this version of Banana Pudding?!

I've never made banana pudding. I always just let my mom do it.

*boggling at Arkie and Fro ... more at Fro for NEVER having had itTwo stories about banana pudding - when I was pregnant with Bre there was a diner across from the Dr/Hosp I always went to that had awesome banana pudding. After every visit I would stop in and have some. When she was born David went in to get some because that's the only thing I wanted while still in the hospital. They sent the biggest bowl I've ever seen. I ate all of it.
Next story - no one in our family makes banana pudding except my SIL. Not because she demands it, we all just got tired of being compared to hers and not ever living up to it. She makes Bananas Foster Pudding. There's liquor in it. 'nuff said.

I have seen banana pudding, but I can't remember ever eating it. I like bananas but for some reason when they're a part of something else I've not enjoyed them as much. I suppose it's bad (and within my OTCC rep) that my first thought was, I wonder how this would be with raspberries?

SNORT
I love all things bananas - banana bread, banana pudding, banana bread pudding, banana cake, banana pancakes, banana french toast, but above all I think I love banana souffles the mostest.
One of my favorite breakfasts is a banana wrapped with a slice of bacon. Mmmmmm.
I forgot to mention the dehydrated bananas dipped in dark chocolate that my grocer carries. OMG!

*gasp*Have you had sweetened iced tea?
I've still never had paella. I once worked for an attorney who had never had collard greens.
When I think of banana pudding, I think woth. Kind of like when I think deep-dish pizza, I think Chicago.

I refuse to eat greens. I won't eat collard greens, poke (or polk) salad, mustard greens, etc. *blech*

LOL. I know. I love Southern food and have had all kinds of delicious things. One of my favorite meals ever was when I was in high school, on vacation with my family in Savannah. (Yes, I was food-focused even back then. My one "to-do" for the trip was that we had to have a "real" southern meal.) We went to Mrs. Wilkes' boarding house. Family-style, sitting with another family at a big table for 10, passing bowls and platters of fried chicken, meatloaf, black eyed peas, collard greens, sweet potatoes, okra, cornbread and about 10 other things - mmmmmmmmm. Actually I think Mrs. Wilkes had banana pudding for dessert but I chose the strawberry cake instead.
After we were finished eating we had to clear our own plates, scraping them into the trash and stacking them to be washed. Cash-only, I think the meal was $8. Plus, Mrs. Wilkes was working the cash register that day, and she signed my cookbook for me.
Happy food memory.

Yum on the banana desserts. Sara Lee used to make a delicious frozen banana cake. People would eat the whole thing at one sitting. Not me, of course.
I had to google "collard greens." I've never had them either. I've never even seen them on a menu.

OOOOH - I love Taste of Home. I picked up a magazine a few weeks ago at the check out stand (totally an impulse buy!) and the 5 recipes I've tried so far have been big hits here. One of the recipes I'm going to post for my next turn in August is their version of fruit pizza.

It's bad that my OTCC date is so late in the year. Because I've changed what I'm making/posting about 20 times so far.

is in the fridge, chilling. The kids are excited about the kick a$$ breakfast we are going to have tomorrow.
I made a half portion. It looks really good. And youngest DD is very proud of the fact she did most of the work herself.

Reviews are in.YUMMMM!
Of course we had to sample the dessert late last night before it had chilled the entire 12 hours. (and I promised I wouldn't tell that Mr. Qwerty had 3 servings).
The chocolate taste reallly comes through and that was surprising because the graham crackers weren't super chocolatey.
NOTES:
I used light cream cheese instead of regular (We need all the help we can get).
This was the first time I made dream whip topping (actually, DD made it)
When I make magic cookie bars with graham cracker crust, the crust always falls apart on me, so this time I crushed the bejeebers out of the crackers into the melted butter. I think I went a little over board as the crust has to be chiselled through, but still super yummy!

I think I went a little over board as the crust has to be chiselled throughI always have that problem, too. Never thought about the possibility that I was crushing the crackers too fine, just thought it was more proof that I'm inept in the kitchen.
