I am sure many of you know and love Butter Chicken. This is my version...slightly different perhaps, but just as delicious. I offer lots of substitution ideas within the recipe..so try it out and enjoy! Thought I would get this out before I forgot!

Ingredients


4 pounds chicken thighs, chopped into 1-inch cubes (I try to buy skinned and deboned ones because they are easy to use!)
6 garlic cloves, crushed, minced
2 teaspoons garam masala or Madras curry powder (your fave)
3 teaspoons ground coriander
3 teaspoons ground cumin
1 teaspoon chili sauce such as Sambal or 1 chopped jalapeno
3/4 cup Greek-style (thick) yogurt or sour cream
7 tablespoons butter, chopped
1 tablespoon white vinegar
3 tablespoons tomato paste
4 large tomatoes, peeled and chopped or one large can tomatoes
1 1/2 cup cream or coconut milk (3/4 of can) (can omit, but won't be as creamy)
1/2 cup fresh coriander, coarsely chopped

Instructions:

Combine chicken, garlic, spices and yogurt or sour cream in a covered container or zip lock bag. Refrigerate for an hour or two. This step really combines the flavours.

Melt butter in a deep pan. Add vinegar, tomato paste, and the canned or fresh tomatoes. Boil rapidly, stirring until sauce is thick (approximately 20 minutes).

Reduce heat to a simmer and add chicken mixture. Continue to simmer, stirring occasionally until chicken is cooked through. Add cream or coconut milk, simmer a few minutes more, and garnish with chopped cilantro

Serve with rice or over other vegetables. Makes at least 4 servings, depending on size! Enjoy

Question - it looks like a piece of cinnamon in the pic but I don't see cinnamon in the recipe...?

PS - you are going to be Rob's favorite OTCC person. He loves anything with curry in it and I don't fix curry much at all. So he will be excited about this. In fact, I may just let him be the OTCC cook this time and I will take pics.

There is cinnamon in the picture because sometimes I throw in a stick for a bit of flavoring and forgot to include it in list..good catch! (too much multi-tasking yesterday!) Yes, you can throw some in while it is simmering if you like a hit of cinnamon...it's totally optional!

At our grocery store it's always called cilantro, at the farmer's market - coriander leaves, in Chinatown - Chinese parsley.

I am making it tomorrow. I picked up a lovely mead that I think will go well with this (I was tempted to try the alfafa wine, but I am allergic to alfalfa. It probably would be OK, but I didn't want to risk the hefty pricetag.)

It's simmering now. Be ready to serve in 10 minutes. And after the crappy day we've had, the mead wine is already opened and sampled.

ETA - fantastic!
I used fresh tomatos, apple cider vinegar (because I forgot we were out of white).
I chickened out and only used 1/2 the jalepeno, next time I would use the whole.
I bought cilantro first time from the farmer's market. It was more subtle than the safeway cilantro, next time I would go with Safeway's because I love cilantro.

It was very good, definitely a keeper (and easier than the custard for the icecream). The girls were ticked because we sent them to bed and told them they could have leftovers tomorrow. We are such mean parents.

I have the chicken in the ziploc with the spices right now!

Can't decide whether to have this over rice or couscous.

My chicken is currently defrosting...and then I have to run to the store to get the yogurt (or sour cream, haven't decided yet). I'm using breast tenders (*snicker*) since I have a ton of those and was too lazy to go buy thighs.

Good. I loved the taste and texture. Little different than what we are used to. We like more in your face spicy, so it was a touch bland for us. I think next time I would add some spicy mustard. I also added scallions and baby bella mushrooms which ended up fantastic.

We also ended up having it over jasmati rice. What a wonderful flavor in my mouth!

Well here's what happened at the Catt house...

I used WAY too much cumin (God forbid I measure anything LOL), so it was a wee bit bitter. So in my infinite wisdom I decided to add a little cinnamon...as I was shaking a little cinnamon into the dish the damned cap fell off and a little brown hill of cinnamon was formed.

So to combat that I added more salt and garlic powder then added more curry powder (forgetting that cumin is one of the ingredients D'OH!), then added a little sugar and ginger. Also sauteed up some carrots (for sweetness) and onion (just because I have a big 'ol bag of 'em and I'm trying to find any reason to use onions haha).

Anyway...what I ended up with is quite delicious, yet also quite different from what the original recipe was supposed to be.

FAIL.

I was going to take a photo of our steak fajitas from the other night and proclaim that this dish was delicious with just a few tweaks.


(Seriously, though, I bought chicken yesterday specifically to try this. Those photos are intoxicating!)

You were quite the mad scientist. I think regular onions would have been better than the scallions I used. I got swayed in the store because they looked so good.

So as a result of the curry though our bedroom stank last night!

Hey everyone,
I posted this recipe early as I knew I was heading away for a few days and had to get it in. So, glad to hear about people trying it (and experimenting with it! awesome!)
karchita, yes, fresh coriander is another name for cilantro, which is also the same thing as chinese parsley. Why it has so many different names is beyond me..thanks for clarifying that while I was away...

Glad to hear that people have fun with the recipe!!

I only spoke up because you'd called it coriander in one place and cilantro in the other. It comes from the same plant, but I'd always heard the different names being used for the different plant parts. I've never heard anyone call the leaves coriander before and chinese parsley is totally a new one for me. Maybe it's a Canadian v. American dialect thing, which is endlessly fascinating .

I got all the ingredients today and will be making this very soon. DH won't be home for dinner for the next two nights, soI may have to make it just for myself. Which is not such a bad thing.

This is a GREAT, EASY basic curry type recipe and I'll be using it again with different meats, veggies, etc.

Yum! Very easy and very good!

I used non-fat yogurt and half the butter, so the texture wasn't so creamy. I wouldn't use non-fat yogurt again but I would use half the butter again. I ended up with a lot of extra sauce, but I don't know how much chicken I used, so my porportions were off. If I added enough chicken for all the sauce, like double, it seems it would make way more than four servings, maybe more like eight. Not that that really matters. This is all going to get eaten! I served it over jasmine rice and it was perfect.

I totally forgot the cilantro, but I'll use it on the leftovers, which I am very much looking forward to.

Thanks, MKitty, for a great recipe. The long lead time (two hour soak for the chicken) could make this hard to do on work nights, but I'll most definitely be making this again.

I cut up the chicken and tossed together to sour cream and spices in a baggie and let it marinate overnight. Made for a really simple dish to throw together the next night. I'm usually not very good at doing things ahead of time, so was rather proud.

That is a very good idea, but I'm usually barely able to remember to take the chicken out of the freezer the night before. Even so, I may be able to make this on days when I am home early and DH is home late or on weekends.

We both enjoyed the leftovers very much, so I am sure I'll make it again.

Rob made this last night. He loved it! As with all curry flavored dishes, not my favorite, but I didn't wrinkle up my nose. We halved the recipe so we wouldn't have any left-overs. We do a slow carb diet 6 days a week, so we try to not have anything we wouldn't eat sitting in the fridge. So we halved everything except the spices, it was perfect for Rob. If he made the full recipe I think he would double the spices. I wanted more tomato, I think he cut them too small as they cooked away to barely anything. And I would throw in some frozen peas at the end when he makes it again.

He served it over Indian style basmati rice and made some homemade bread. We had a couple of Newcastles that went really well with it.
