I am going to post two favorite recipes here. I do not have pictures, I'm sorry, but this is a fill-in, so there was no way for me to make these before posting. Make one, make both.In addition to your comments, etc., I want pictures!
Southwestern Flank Steak with Triple Fruit Salsa
Prep Time: 10 Minutes
Marinate: 8 Hours
Cook Time: 16 Minutes
Ingredients
1 and 1/2 lb. flank steak
1/4 cup fresh orange juice
2 tbsp. chili sauce
2 tbsp. soy sauce
2 tbsp. vegetable oil (I use canola)
1 tsp. honey
2 cloves garlic, minced
1 and 1/2 tsp. grated orange rind
2 tbsp. chili powder
1/2 tsp. salt
1/4 tsp. ground red pepper
1 medium-size orange, thinly sliced
Garnishes: orange wedges, fresh cilantro sprigs
Method (because Querty uses that
)
Score steak diagonally across the grain at 1-inch intervals. Place steak in a heavy-duty Ziploc bag or large shallow dish; set aside.
Combine orange juice and next 9 ingredients (everything down to the orange); pour over steak. Place orange slices over steak. Seal or cover, and marinate in fridge for 8 hours, turning occasionally.
Remove steak from marinade, discarding the marinade. Grill steak, covered with grill lid, over medium-hot coals (350 to 400 degrees) 7 to 8 minutes on each side or to disired doneness. Let stand 5 minutes. To serve, slice steak diagonally across the grain into thin slices. Serve with Triple-Fruit Salsa.
Triple-Fruit Salsa
Prep Time: 15 Minutes
Chill: 8 Hours
1 cup diced fresh pineapple or canned pinapple tidbits, undrained
1 cup chopped fresh papaya or mango
1 kiwi, peeled and chopped
3/4 cup diced sweet red pepper
3 tbsp. minced fresh cilantro
1 and 1/2 tbsp. sugar
2 and 1/2 tbsp. white wine vinegar
1/4 to 1/2 tsp. dried crushed red pepper
Combine all ingredients in a small bowl, tossing gently. Cover and chill up to 8 hours. Let stand at room temp. before serving.
This recipe courtesy of Southern Living.
Lone Star Steakhouse Sweet Bourbon Salmon
Ingredients
1/4 cup pineapple juice
2 tbsp. soy sauce
2 tsp. brown sugar
1 tsp. bourbon
1/4 tsp. cracked black pepper
1/8 tsp. garlic powder
1/2 cup veg. oil
2 tsp. fresh snipped chives
Salmon (or Chicken if you are not a seafood fan)
Method
Combine pineapple juice, soy sauce, brown sugar, bourbon, pepper and garlic powder in a bowl. Stir to dissolve sugar, add oil.
Remove skin from salmon. Marinate salmon at least an hour. Save some marinade for cooking.
Preheat grill over med/high heat.
Cook salmon on each side 5-7 minutes, brushing with marinade while cooking.
This goes very well with baked sweet potatoes with brown sugar and butter, and a salad.

Definitely corn on the cob. We eat a lot of salads, so I always have a salad.

I have to thank you for a grill recipe. It's going to be in the triple digits for the next week or so and I am not turning on stove or oven!I have used my crockpot alot lately. I made Makhani Chicken last night in the crock. I thought of Breezy.

LAST EDITED ON 08-10-10 AT 12:27 PM (EST)I agree with Tummy-thank you for grilling recipes. I won't be making the salmon (Nolay hates fish), but I'll make the skirt steak. I'm hoping we have one tucked in the freezer from our beef purchase this spring. I think I might have used it already, though.
ETA: If you OTers are already shopping for pineapple, might as well try Silvergirl's low fat pineapple pound cake!

Steaks (yes, plural. There was 2 in the package.) are marinating. Salsa is in the refrigerator. About to cut up the watermelon for some watermelon martinis. Playing like this is the weekend.

Oh My. That. was sooo good. I'm too stuffed to crop and size pictures for posting. Will do that tomorrow.
One confession - I added a little red onion to the salsa and a fresh jalepeno. Very good.
I also overcooked the steak a little. I like medium rare and it was medium. But for the first time cooking flank steak it was super tender and really flavorful.
Thanks Boo!
and I have left-overs for tomorrow's dinner. Rob's a happy man.

I like red onion, so no apologies. I'm glad you liked it. I'm going to do the salmon this weekend for DH and maybe the steak this weekend or next.
Also, I don't like papayas or mangos. I use a peach.

Posted by weltek on 08-12-10 at 09:33 AM
How do you think this would be on a different kind of steak? I don't have any flank steak, but have a bunch of Ribeyes, Sirloins, T-Bones, etc. in the freezer. I hate to go buy a flank steak when I already have those.

"RE: Question"
Posted by samboohoo on 08-12-10 at 09:48 AM
I think it would be fine. I would probably go with the Sirloins, since the other are the more flavorful of the two.Incidentally, I had a dream last night that I was at your house eating ribs.

Garlic didn't make it into the pic -
In the bag
Salsa ingredients - onion not there because it was a last minute addition
The salsa was still chilling - I remembered it after the photo - I think I was concentrating more on the watermelon 'tinis (even though they're served in the 'rita glasses they're still 'tinis)
right before inhaling - yum

Yummmmmm. I'll be adding jalepeno and onion, too, given your suggestions.

That last one is GORGEOUS! I am way behind due to being really sick twice in the last month which is really unusual for me. Plus it's been so freakin' hot that even going to the grocery store is painful, especially in a black car.
"RE: Flank Steak pics"
Posted by Tummy on 08-12-10 at 12:07 PM
That's a big compliment coming from you. Hate that you've been sick! And I hear you on it being too hot - I just haven't enjoyed this summer because of the excessive heat. Although we have been on more float trips. I have a black car too and am doing a lot of running around chores either early in the am or at night.Weltek- I'm very glad I added the onion and jalepeno. I'm going to add another jalepeno before left-overs because I like a little more heat.

I've lost my camera
And it had all my holiday photographs on it
I really should have learned by now, when Boo says "jump" one should ask how high whilst one is already in the air.
The steak was gorgeous, but it needed the salsa to give it a bit more moistness.
I will probably try this again properly as the flavours were very pleasant.

Glad you enjoyed. I'm making the salmon tonight and the steak this weekend. Even I'm behind on my own.My external hard drive died this weekend - with 7 years of pictures on it. I think I have most on camera sticks, but that's going to require re-organizing. *sigh*

So I didn't thaw my meat on time, but I had two chicken breasts thawed. And the fruit was going downhill fast, so I decided to make this with chicken last night. It turned out good! We are using the leftover salsa for shrimp tacos tonight.1. Per Tummy's suggestion, I added onion and a hot pepper (I used a red nacho pepper from the garden...similar to jalepeno, but hotter) to the fruit salsa. Would absolutely do that again.
2. I didn't have chili sauce, so I used a mix of ketchup and a homemade hot sauce (yes, I know chili sauce isn't really spicy, but I thought it would compliment the dish well).
3. I only let the chicken marinade for about 45 minutes, as the oj would likely toughen it if marinaded longer.
4. Served with a side of fried potatoes with lemon and dill and a marinaded salad of cukes, tomatoes and radishes. All of it DEVOURED.
I can't wait to make this again (with any meat!). My mango was PERFECTLY ripe and flavorful. I've never had a mango that perfect. I hope I can snag another this week.
Pics tonight...

Very yummy and very scary because a freak thunderstorm blew up as Mr. Qwerty was grilling. I was worried that the steak and chicken wasn't the only thing coming back in crispy.
Next time I would use fresh pineapple instead of canned, but I could only work with what I had.

Salsa is made.
Steak is marinating.Flank steak isn't that common around here, took awhile to find one that really was a flank steak that was labeled as a flank steak. They sell a lot of "london broil" but that can be any of a number of different cuts and I wasn't sure I could tell by looking if it was the right one.

I'm about to do mine right now. We'll be eating dinner together, so to speak.
My steak for tonight is not flank. I think it's flat iron. That's all they had this week.

If the weather lets up I'll do it on the charcoal grill, otherwise it'll be done on the not-a-George Foreman Grill inside.

Ingredients for Steak:
Ingredients for Salsa: I used a peach instead of a papaya or mango.
Scored Meat: I may have gone a little deep.
Orange Slices: I only used one orange. I had the second for garnish, but I didn't use it.
Oranges in the bag on top of the meat:
Prepared Salsa about to marinate:
Meat cooked to perfection:
Meat topped with salsa:
I had another picture of the storm that was going on as I was cooking. Yes, I ran out, flipped the meat and ran back in. That was fun. Yeah, right.
I also plated it to the side and then forgot to take a picture of the corn. I simply steamed the corn. It was white corn, so white corn on a white plate would have looked kind of funny anyway.
I don't know why I haven't made this in so long. The flat iron steak was really good - much better than official flank that we used for something else weeks ago. I also have leftovers for tomorrow. And I have a lot of salsa.

Yours and Snidget's pictures look great. That's how my steak was suppose to look as far as doneness! And your right - the recipe makes A LOT of salsa.
