Does Nolay require that there be a meat-like substance in there? Could you substitute more veggies or beans for the sausage (and add in some sausage seasonings like fennel, garlic, red pepper flakes to keep the sausage flavor without the meat?I've found all non-meat meat products to be lacking (and in general I'm not a big fan of non-whatever-they're-supposed-to-be products) so I'm afraid I'm not much help with brand recommendations, but you could probably make a dish like this without the sausage and just adding in more hearty veggies (peppers, mushrooms, winter squash, artichoke hearts. . . ) Bobblefred by Tribe.
