A favorite Spanish dish. Many variations, probably as many as there are cooks. Thin, thick, small, large... but all so good.Thanks for this, this is the first version I've heard of that you don't have to flip, which for the pie sized version takes a very talented and experienced cook to perform well. I've tried, and failed more often that I've succeeded. Even then, as a hash it tastes good. The bits that fall on the floor can be discarded if one is picky about those things. Often served in Tapas bars in Spain. So good.
