I use water, generally speaking, and sometimes a splash of lemon or lime juice. When I do this, it's often for something like burritos, so season accordingly (mexican spices in that case). When I do it for something like chicken salad, I sometimes don't even season the water (again, I'll just add a splash of lemon juice. I find it really doesn't matter that much, as it doesn't cook for that long and the flavors don't really penetrate the chicken unless it's a strong herb/spice/liquid. And generally, I'm putting the chicken into something with big flavors/seasonings. -A Tribetastic Creation
