I usually do try to get it cooked with enough oil so it will get a bit of a brown crust on it. I also tend to cut it into fairly small cubes when I use it as well. you can slice it into slabs and freeze those. The color changes a bit, but some people think it gives it a meatier texture and makes it suck up more sauce. I also like small cubes of it in oriental soups. I usually put it in miso soup but if you have a hot and sour soup recipe or maybe even small cubes in an egg drop soup could use it up.
